This recipe was given to me by my dear friend, Adam. I've only asked him to repeat the recipe for me about 3980235 times, and no matter how many times I attempt to cook it, it's never as good as the first time he made it for me. Nevertheless, I keep on trucking... (and it turns out pretty darn good regardless!)
GODFATHER PASTA (Adam's Pasta)
linguini (1 lb)
EVOO
hot Italian sausage (1.5ish lbs)
3 cloves garlic
1 small yellow onion, diced
28 oz can crushed tomatoes
fresh basil
Italian spices
red pepper flakes
Heat pan to high heat. Drizzle with EVOO, then sear sausages. Add onions and garlic, Italian seasoning, and crushed red pepper flakes, salt, and pepper. When the sausages are almost finished, slice at a diagonal. Return to pan and continue until sausages are cooked through.
Meanwhile, cook linguini to al dente.
Add crushed tomatoes to sausage mixture, adjust seasonings if necessary. Add pasta and a smidge of pasta water to finish cooking. Lastly, incorporate torn basil. Stir. Top with freshly grated parmesan, the good stuff.
Well, there we have it. My first recipe! The rustic Italian flavors, paired with a fabulous red wine, transports me back to Italy. I will go back soon, that's for certain. Enjoy!
